• Sweeney’s Sweet Apple Tart

    A recipe from my mum – I think Mrs. Lovett would love the knobbly bits.

    Sweeney Todd Sweet Apple Tart

    Ingredients (of doom)

    250 g very soft butter (not melted)
    ¾ c caster sugar
    grated rind 1 orange / lemon
    1 egg
    1 tsp vanilla essence
    2 ½ c flour
    2 ½ tsp baking powder
    either a 500 g can of sliced apples, or approx 4 large apples (I like using fresh apples)

    Method (or Madness)

    1. If you’re using real apples (or real testicles, or whatever you have lying around the bakery), de-core them, slice them, and cook them lightly. I do this by covering them in sugar, putting glad wrap over the top, and popping them into

    2. Beat together butter, egg, castor sugar, rind and essence until thick and creamy. Add sifted flour and baking powder. Stir well.

    3. You should now have a dough that’s soft and a little sticky (Sweeney likes it thus). Spread 2/3 of this dough into a well-lined and greased pie container (about 23cm round). Get in there with your hands and smush it all down and around the sides.

    4. fill the centre with the apples.

    5. pinch off little bits of remaining dough, and roll into little balls. Place on top of the apples.

    6. Bake at 180C for 35-45 minutes.

    7. To serve, sprinkle a little icing sugar over the pie and serve warm with ice cream or pouring cream.

    A seriously good apple pie. I’m making this over the weekend for the first time this winter, and it shall be divine.

    This sounds amazing! Do you think it would work with peaches or blueberries?

    I’ve had it with peaches before to great success – I’d say it would work fine with any fruit.
